  • 3 cups fresh peaches, peeled and diced (about 45 medium peaches)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon (optional)

  • Instructions

  • Preheat your oven to 350°F (175°C). In a medium mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the vanilla extract, mixing well.
  • Gradually add in the all-purpose flour and salt, combined until just mixed. The texture should be somewhat crumbly but hold together when pressed. Reserve one cup of dough for the topping.
  • Spread the remaining dough evenly into the bottom of a greased 9×13-inch baking dish. Use your fingers or a spatula to pack it tightly. Bake for 15 minutes until the edges are lightly golden.
  • In a large bowl, combine the diced peaches, lemon juice, cornstarch, and cinnamon (if using). Gently toss until the peaches are coated evenly. Pour the mixture onto the baked crust, spreading it out evenly.
  • Crumb the reserved dough over the peach mixture, covering the peaches completely. Bake for an additional 25-30 minutes until the top is golden brown and the filling is bubbly.
  • Allow the bars to cool in the pan for at least 20 minutes before slicing. For best results, chill them in the refrigerator for a couple of hours before serving for easy cutting.
