  • 4 large (boneless, skinless) chicken breasts
  • 1 cup ricotta cheese
  • 1 cup chopped fresh spinach
  • 2 cloves minced garlic
  • ½ cup grated Parmesan cheese
  • 2 tablespoons mixed fresh herbs (basil, oregano, parsley)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Toothpicks as needed

  • Instructions

  • Preheat the oven to 375°F (190°C). In a mixing bowl, combine the ricotta cheese, chopped spinach, minced garlic, grated Parmesan cheese, and mixed fresh herbs. Season with salt and pepper to taste, and stir until well-combined.
  • Using a sharp knife, carefully slice each chicken breast in half horizontally to create a pocket. Season the inside of the chicken with salt and pepper.
  • Spoon the ricotta mixture into each chicken pocket generously. Secure the opening using toothpicks or kitchen twine.
  • In a large oven-safe skillet, heat olive oil over medium-high heat. Add the stuffed chicken rolls and sear each side for about 3 to 4 minutes until golden brown.
  • Transfer the skillet to the preheated oven and bake for 25 to 30 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Allow the chicken rolls to rest for about 5 minutes before slicing and serving warm.
