  • 4 cloves of garlic (minced)
  • ¼ cup of fresh parsley (chopped)
  • ¼ cup of olive oil
  • ¼ cup of balsamic vinegar
  • 2 tablespoons of lemon juice (freshly squeezed)
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • 1 bunch of asparagus (trimmed)
  • 1 cup of cherry tomatoes (halved)

  • In a large bowl, combine olive oil, balsamic vinegar, lemon juice, minced garlic, parsley, salt, and pepper. Add the chicken thighs and ensure they're well coated. Let them marinate for at least 20 minutes, or up to 2 hours.
