1 lb Ground turkey or beef
1 medium Onion, diced
3 cloves Garlic, minced
1 large Carrot, diced
1 can (28 oz) Canned diced tomatoes
4 cups Low-sodium chicken broth
8 sheets Lasagna noodles, broken
2 tsp Italian seasoning
¼ tsp Red pepper flakes
2 cups Fresh spinach
1 cup Ricotta cheese
1 cup Shredded mozzarella cheese
2 tbsp Olive oil
Instructions
Step 1: In a large pot, heat the olive oil over medium heat. Add the ground turkey or beef and cook until browned, breaking it apart with a spatula, approximately 5-7 minutes.
Step 2: Add the diced onion, garlic, and carrot to the pot. Sauté for another 5 minutes, or until the onions become translucent and fragrant.
Step 3: Pour in the diced tomatoes (with juices) and chicken broth. Stir in the Italian seasoning and red pepper flakes. Bring the mixture to a gentle simmer and let it cook for 10 minutes.
Step 4: Break the lasagna sheets into bite-sized pieces and add them to the pot. Increase the heat slightly and ensure they are fully submerged. Cook for about 10-12 minutes until the noodles are tender.
Step 5: Once the noodles are ready, add the fresh spinach to the soup. Stir gently until the spinach wilts, approximately 2-3 minutes.
Step 6: To serve, ladle the soup into bowls and top with a dollop of ricotta and a sprinkle of shredded mozzarella.
