2 cans (15 oz each) of white beans, canned and drained
4 cups of vegetable broth
2 tablespoons of olive oil
1 medium onion, diced
4 cloves of garlic, minced
2 large carrots, diced
2 stalks of celery, diced
2 cups of spinach, fresh or frozen
1 teaspoon of dried thyme
1 bay leaf
Salt and pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 to 7 minutes until the vegetables are softened and the onion is translucent.
Stir in the minced garlic, dried thyme, and bay leaf. Cook for 1-2 minutes to release their natural essences.
Add the drained white beans and pour in the vegetable broth. Stir well to combine all the ingredients.
Bring the mixture to a gentle boil, then reduce the heat to low. Allow it to simmer uncovered for around 45 minutes, stirring occasionally.
After 45 minutes, stir in the spinach. If using frozen spinach, allow it to heat for an additional 10 minutes.
Season the soup with salt and pepper to taste. Remove the bay leaf, and optionally blend a portion of the soup for a creamier texture.
