  • 2 cans (15 oz each) of white beans, canned and drained
  • 4 cups of vegetable broth
  • 2 tablespoons of olive oil
  • 1 medium onion, diced
  • 4 cloves of garlic, minced
  • 2 large carrots, diced
  • 2 stalks of celery, diced
  • 2 cups of spinach, fresh or frozen
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 to 7 minutes until the vegetables are softened and the onion is translucent.
  • Stir in the minced garlic, dried thyme, and bay leaf. Cook for 1-2 minutes to release their natural essences.
  • Add the drained white beans and pour in the vegetable broth. Stir well to combine all the ingredients.
  • Bring the mixture to a gentle boil, then reduce the heat to low. Allow it to simmer uncovered for around 45 minutes, stirring occasionally.
  • After 45 minutes, stir in the spinach. If using frozen spinach, allow it to heat for an additional 10 minutes.
  • Season the soup with salt and pepper to taste. Remove the bay leaf, and optionally blend a portion of the soup for a creamier texture.
