Savor this Delicious Homemade Cheesy Beef Veggie Casserole Recipe packed with flavor Perfect for family dinners any night of the week
Ingredients
Scale
1 lb lean ground beef (or ground turkey for a healthier option)
2 cups mixed vegetables (bell peppers, carrots, and peas)
1 cup uncooked pasta (elbow macaroni or penne)
2 cups shredded cheese (cheddar or a blend)
1 can (10.5 oz) cream of mushroom soup
1 cup beef broth (low-sodium for a healthier option)
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Instructions
In a large skillet over medium heat, brown the lean ground beef, breaking it up as it cooks. Season with garlic powder, onion powder, salt, and pepper. This step usually takes about 5-7 minutes.
While the beef is browning, cook your pasta according to package instructions until al dente. Drain and set aside. This process should take an additional 10 minutes.
In a large mixing bowl, combine the browned beef, cooked pasta, mixed vegetables, cream of mushroom soup, beef broth, and half of the shredded cheese. Mix well until everything is evenly incorporated.
Pour the mixture into a greased 9×13 baking dish. Spread it evenly for consistent baking.
Sprinkle the remaining shredded cheese over the top of the casserole. This layer will melt beautifully, creating a delicious cheesy crust.
Preheat your oven to 350°F (175°C) and bake the casserole for 45-50 minutes, or until it’s bubbling and the cheese has melted to a golden perfection.
Allow the casserole to cool for about 10 minutes before serving.
