Ingredients
Scale
3 cups of all-purpose flour
2 1/4 teaspoons of active dry yeast
1 cup of warm water
2 tablespoons of olive oil
1 teaspoon of salt
2 cups of shredded mozzarella cheese
1 cup of pepperoni slices
1/2 cup of pizza sauce
1 teaspoon of Italian seasoning
Instructions
In a large mixing bowl, combine the warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.
Stir in the olive oil, salt, and gradually add the flour, mixing until a dough forms.
Transfer the dough onto a floured surface. Knead for about 8-10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm area for 40 minutes, or until it has doubled in size.
While the dough is rising, gather your desired fillings. Mix together the mozzarella cheese, pepperoni, pizza sauce, and Italian seasoning.
Preheat your oven to 375°F (190°C). Once the dough has risen, divide it into 8-10 equal portions.
Roll each piece out into a circle about 6 inches in diameter. Spoon a generous amount of the filling onto one half of the dough circle.
Fold the dough over to create a half-moon shape. Press the edges with your fingers to seal.
Place the sealed pockets on a baking sheet lined with parchment paper. Brush the tops with olive oil and bake for 20 minutes, until golden brown.
Let the pizza pockets cool for a few minutes before serving.
