Ingredients
Scale
2 chicken breasts, boneless and skinless
2 tablespoons olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
2 tablespoons honey
Salt and pepper to taste
8 oz penne pasta
1 cup heavy cream
1 cup grated Parmesan cheese
Fresh parsley, chopped (optional)
Additional grated Parmesan cheese (optional)
Instructions
Marinate the chicken breasts in olive oil, honey, salt, and pepper for at least 30 minutes.
Cook the marinated chicken in a skillet over medium heat until its internal temperature reaches 165°F (75°C). Remove from the heat and allow to rest before slicing into strips.
Cook the penne pasta according to package instructions until al dente. Drain and rinse under cold water.
In a large saucepan, combine heavy cream and grated Parmesan cheese over low heat, stirring until melted and creamy. Mix in the cooked pasta.
Sauté sliced onions and bell peppers in the same skillet until softened and slightly charred.
Choose your bread (ciabatta, focaccia, or baguette) and layer creamy pasta, sliced chicken, and sautéed vegetables. Grill until golden brown on both sides.
Slice the panini in half and serve alongside extra pasta, garnished with parsley and Parmesan cheese.
