1/2 cup of unsweetened cocoa powder
1 teaspoon of baking soda
1/4 teaspoon of salt
1 cup of unsalted butter (softened)
1 cup of granulated sugar
1/2 cup of brown sugar
2 large eggs
1 teaspoon of vanilla extract
1 cup of chocolate chips
1 tablespoon of espresso powder
2 cups of powdered sugar (for glaze)
1/4 cup of cocoa powder (for glaze)
1/4 cup of milk (milk of choice)
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine your flour, cocoa powder, baking soda, and salt. Whisk until well blended.
In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 to 5 minutes).
Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract and mix until fully combined.
Gradually incorporate the dry ingredients into the wet ingredients, mixing on low until just combined.
Fold in the chocolate chips and espresso powder until evenly distributed.
Using a cookie scoop, drop dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for approximately 10 to 12 minutes. The edges should be set and the centers slightly soft.
Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
Prepare the mocha glaze by whisking together powdered sugar, cocoa powder, and milk until smooth.
Once the cookies are cooled, dip the tops into the mocha glaze or drizzle it over. Allow the glaze to set before serving.
