4 cups all-purpose flour
1 tablespoon instant yeast
1 tablespoon sugar
1 tablespoon salt
1 ½ cups warm water (about 110°F)
⅓ cup extra virgin olive oil (plus more for drizzling)
4 cloves of garlic, minced
½ cup grated Parmesan cheese
Fresh rosemary, chopped (optional)
Coarse sea salt for topping
Instructions
In a large mixing bowl, combine 4 cups of flour, instant yeast, sugar, and salt. Gradually stir in the warm water and ⅓ cup olive oil, mixing until a sticky dough forms.
Cover the bowl with a damp cloth or plastic wrap and let the dough rise for about 30 minutes, or until it has doubled in size.
Lightly flour your work surface and turn out the dough. Gently stretch it into a rectangle (about 12×16 inches) and transfer it to a greased 9×13 inch baking dish.
Cover the dough again and let it rise in the baking dish for another 20 minutes. Preheat your oven to 425°F.
Use your fingers to dimple the dough all over. Sprinkle the minced garlic and grated Parmesan cheese evenly across the top, followed by a drizzle of olive oil and a sprinkle of coarse sea salt.
Place the focaccia in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and crispy.
