1 ½ cups of all-purpose flour
¾ cup of granulated sugar
½ cup (1 stick) of unsalted butter, cold and cubed
3–4 tablespoons of ice water
3 large oranges, juiced and zested
3 large eggs
1 cup of heavy cream
1 teaspoon of vanilla extract
¼ teaspoon of salt
Instructions
In a large mixing bowl, combine the flour and sugar. Add the cold, cubed butter, and mix until the mixture resembles coarse crumbs.
Slowly add ice water, one tablespoon at a time, mixing until the dough comes together. Shape it into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Juice and zest the oranges until you have about 1 cup of juice and 2 tablespoons of zest. In a bowl, whisk together the eggs, granulated sugar, heavy cream, vanilla extract, orange juice, and zest.
Roll the dough on a lightly floured surface until about 1/8 inch thick. Transfer to a tart pan, trimming the edges, and prick the bottom with a fork.
Preheat your oven to 350°F (175°C). Line the tart shell with parchment paper and fill with pie weights. Bake for 15 minutes, then remove weights and bake for an additional 10 minutes until lightly golden.
Pour the orange filling into the cooled tart shell. Bake for about 25-30 minutes, or until the filling is set but slightly jiggly in the center. Allow it to cool completely before slicing.
