  • 2 teaspoons Italian seasoning
  • 12 lasagna noodles, broken into pieces
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)

  • Instructions

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Incorporate the shredded chicken into the pot, followed by the chicken broth. Bring it to a gentle simmer, allowing those flavors to meld beautifully.
  • Add the fresh spinach (or kale) and skim off any foam that rises to the surface. Keep stirring until the greens wilt.
