1 cup of granulated sugar
1 tablespoon of baking powder
½ teaspoon of salt
½ cup of unsalted butter (1 stick)
2 tablespoons of lemon zest
½ cup of lemon juice (freshly squeezed)
⅓ cup of limoncello
3 large eggs
1 cup of powdered sugar (for icing)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream the unsalted butter and granulated sugar together until light and fluffy (about 3-5 minutes). Incorporate the lemon zest, lemon juice, and limoncello until well combined.
Beat in the eggs one at a time, fully incorporating each before adding the next.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this to the wet ingredients until just combined.
Pour the batter into a greased 9-inch round cake pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
Mix the powdered sugar with a tablespoon of limoncello and a teaspoon of lemon juice until smooth. Adjust as needed for consistency.
Once the cake is completely cool, pour the icing over the top for a beautiful presentation.
