1 pound of ground beef (preferably grass-fed)
1/4 cup of almond flour
1 large egg
1/4 cup of grated Parmesan cheese
2 garlic cloves (minced)
2 tablespoons of fresh parsley (chopped)
1 teaspoon of salt
1/2 teaspoon of pepper
2 tablespoons of olive oil (for cooking)
1 cup of marinara sauce (sugar-free, for serving)
Instructions
In a large mixing bowl, combine the ground beef, almond flour, egg, grated Parmesan cheese, minced garlic, fresh parsley, salt, and pepper. Mix well but gently to keep the meatballs tender.
Roll the mixture into golf ball-sized meatballs (about 1 to 1.5 inches in diameter) and place them on a parchment-lined baking sheet.
Heat olive oil in a skillet over medium heat. Add meatballs and sear them for about 3-4 minutes on each side until golden brown, or bake in the oven at 400°F (200°C) for 15-20 minutes.
Pour the marinara sauce over the meatballs in the skillet and let them simmer for an additional 5 minutes.
Transfer the meatballs to a serving dish and garnish with extra chopped parsley or grated cheese, serving with zoodles or cauliflower rice.
