1 cup of shredded cheese (cheddar, mozzarella, or your favorite)
1/2 cup of all-purpose flour
1 large egg
1/4 cup of green onions, chopped (optional)
Salt and pepper to taste
Oil for frying (canola or vegetable oil works best)
Extra flour for dusting
Instructions
Combine mashed potatoes, cheese, flour, and egg in a mixing bowl and season with salt and pepper.
Cover and refrigerate the mixture for at least 30 minutes.
Shape the chilled mixture into small balls (about 1 inch in diameter) and dust lightly with flour.
Heat oil in a frying pan over medium heat.
Fry the cheese puffs for about 3-4 minutes on each side until golden brown.
