1 lb of boneless, skinless chicken breasts
2 medium carrots, diced
2 stalks of celery, diced
3 cloves of garlic, minced
1 medium onion, diced
8 cups of chicken broth
1 large lemon, juiced and zested
2 teaspoons of dill (fresh or dried)
Salt to taste
Pepper to taste
2 tablespoons of olive oil
Instructions
Season the chicken breasts with salt and pepper. In a large pot, heat olive oil over medium heat and add the chicken. Sear each side for about 5-7 minutes until golden brown. Remove the chicken from the pot and set aside.
In the same pot, add the diced onion, carrots, and celery. Sauté for about 7 minutes until the vegetables are soft and fragrant.
Add the minced garlic and cook for an additional minute. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
While the broth is heating, shred the cooked chicken using two forks. Once the broth simmers, add the shredded chicken back along with the lemon juice and zest.
Add dill, salt, and pepper to taste. Simmer for another 10 minutes.
Serve the soup hot, garnished with extra lemon slices and fresh dill if desired.
