2 cups of all-purpose flour
1 cup of granulated sugar
1/2 teaspoon of salt
1 cup (2 sticks) of unsalted butter, softened
2 large eggs
Juice and zest of 2 large lemons
1 teaspoon of baking powder

Instructions
Preheat your oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper, leaving some overhang.
In a medium mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Gradually add in the flour, salt, and baking powder until combined to form a crumbly mixture.
Press 2/3 of the crumbly mixture into the lined baking dish to form the crust. Bake in the preheated oven for 15 minutes, until barely starting to brown.
While the crust is baking, whisk together the eggs, lemon juice, lemon zest, and remaining sugar in a separate bowl. Pour this mixture over the warm crust once it's done baking.
Sprinkle the remaining crumb mixture on top of the filling evenly.
Return the dish to the oven and bake for an additional 20-25 minutes, until the filling is set and the topping is slightly golden. Allow to cool completely in the pan before lifting out.
Dust with powdered sugar before slicing into squares and serving.
