4 pieces of Chicken thighs (bone-in, skin-on)
1/4 cup of Olive oil
4 cloves of Garlic, minced
2 Lemons, juiced and zested
3 medium Potatoes, diced
2 cups of Broccoli florets
1 teaspoon of Dried oregano
1 teaspoon of Salt
1/2 teaspoon of Black pepper
Instructions
Preheat your oven to 425°F (220°C).
In a bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
Place the chicken thighs in a ziplock bag or a shallow dish and pour the marinade over them. Seal or cover and let marinate in the refrigerator for at least 30 minutes.
Prepare your potatoes and broccoli by dicing the potatoes into evenly sized pieces and cutting the broccoli into florets. Toss them in olive oil, salt, and pepper to season.
Spread the potatoes across one side of a large baking sheet and the broccoli on the other. Place the marinated chicken thighs in the center.
Bake in the preheated oven for 45-50 minutes, or until the chicken has reached an internal temperature of 165°F (75°C).
