  • 4 pieces of Chicken thighs (bone-in, skin-on)
  • 1/4 cup of Olive oil
  • 4 cloves of Garlic, minced
  • 2 Lemons, juiced and zested
  • 3 medium Potatoes, diced
  • 2 cups of Broccoli florets
  • 1 teaspoon of Dried oregano
  • 1 teaspoon of Salt
  • 1/2 teaspoon of Black pepper

  • Instructions

  • Preheat your oven to 425°F (220°C).
  • In a bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  • Place the chicken thighs in a ziplock bag or a shallow dish and pour the marinade over them. Seal or cover and let marinate in the refrigerator for at least 30 minutes.
  • Prepare your potatoes and broccoli by dicing the potatoes into evenly sized pieces and cutting the broccoli into florets. Toss them in olive oil, salt, and pepper to season.
  • Spread the potatoes across one side of a large baking sheet and the broccoli on the other. Place the marinated chicken thighs in the center.
  • Bake in the preheated oven for 45-50 minutes, or until the chicken has reached an internal temperature of 165°F (75°C).
  • Remove from the oven, allow it to rest for 5 minutes, then serve your Lemon Garlic Chicken and roasted vegetables with additional lemon wedges.
