  • 1 pound of shrimp, peeled and deveined
  • 8 ounces of pasta, spaghetti or fettuccine
  • 4 cups of fresh spinach
  • 4 cloves of garlic, minced
  • 3 tablespoons of olive oil
  • 1/4 cup of lemon juice
  • 1 teaspoon of lemon zest
  • Salt and pepper, to taste
  • 1/2 cup of Parmesan cheese, grated

  • Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, reserve about 1 cup of pasta water, then drain and set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the shrimp to the pan, season with salt and pepper, and cook for 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil and toss in the fresh spinach. Sauté for about 2-3 minutes until wilted. If using, add in a splash of lemon juice for added flavor.
  • Add the cooked pasta and the shrimp back into the skillet. Pour in the remaining lemon juice and lemon zest. If the pasta seems dry, gradually add some of the reserved pasta water until you reach your desired consistency. Stir thoroughly to ensure the flavors intermingle.
  • Mix in the grated Parmesan cheese, allowing it to melt and blend into the dish. Taste and adjust seasoning if needed. Serve immediately, topped with additional cheese and a sprinkle of fresh black pepper.
