2 cups rolled oats
1 cup all-purpose flour (or whole wheat flour)
½ cup brown sugar
½ cup unsalted butter, melted (can use coconut oil as a substitute)
1 teaspoon baking powder
¼ teaspoon salt
1 cup lemon curd (store-bought or homemade)
1 tablespoon lemon zest
Powdered sugar, for dusting (optional)
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt. Whisk until well mixed.
Pour the melted butter into the oat mixture and stir until combined. The texture should be crumbly and moist.
