2 tablespoons of olive oil
2 medium of carrots, diced
2 stalks of celery, diced
4 cloves of garlic, minced
6 cups of low-sodium chicken broth
1/4 cup of lemon juice
2 teaspoons of fresh thyme, chopped
1/4 cup of fresh parsley, chopped
2 cups of spinach
Salt and pepper to taste
Instructions
Begin by gathering all your ingredients and chopping the vegetables as indicated in the ingredients list.
