2 cups of fresh strawberries (divided)
1 cup of plain Greek yogurt
2 tablespoons of honey or maple syrup
1 cup of whipping cream
1 tablespoon of gelatin powder
3 tablespoons of water
1 teaspoon of vanilla extract
Wash 1 cup of strawberries thoroughly and chop them into small pieces.
In a blender, blend the chopped strawberries with honey or maple syrup until smooth.
In a small bowl, sprinkle gelatin over the water and allow it to bloom for about 5 minutes, then heat to dissolve.
In a mixing bowl, combine the Greek yogurt and vanilla extract. Gently fold in the strawberry purée.
In a separate bowl, whip the heavy cream until soft peaks form.
Fold the whipped cream into the yogurt and strawberry mixture gently.
Add the dissolved gelatin to the mixture and stir gently to combine.
Pour the mousse into serving dishes and refrigerate for at least 90 minutes.
Once set, garnish with reserved strawberries and serve chilled.
