  • 1/4 cup of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of shredded cheddar cheese
  • 3/4 cup of cooked bacon bits
  • 1/4 cup of chopped green onions
  • Plain Greek yogurt (as desired for serving)

  • Instructions

  • Rinse the baby potatoes under cold water and place them in a large pot. Cover with cold water, add a pinch of salt, and boil until fork-tender, usually about 15-20 minutes.
  • Preheat the oven to 450°F (232°C).
