1 pound of Ziti pasta
2 tablespoons of Olive oil
4 cloves of Garlic, minced
1 medium Onion, diced
1 cup of Zucchini, diced
1 cup of Mushrooms, sliced
1 Red bell pepper, diced
2 cups of Marinara sauce
15 ounces of Ricotta cheese
2 cups of Shredded mozzarella cheese
1 cup of Grated Parmesan cheese
2 teaspoons of Italian seasoning
Salt and pepper to taste
Instructions
Step 1: Preheat the oven to 375°F (190°C).
Step 2: Cook the pasta in a large pot of salted boiling water until al dente, drain, and set aside.
Step 3: In a skillet, heat olive oil, sauté garlic and onion for 2-3 minutes, then add zucchini, mushrooms, and red bell pepper, cooking for additional 5-7 minutes.
Step 4: Stir in marinara sauce and let it simmer for 10 minutes.
Step 5: In a mixing bowl, combine cooked pasta, ricotta, half of the mozzarella, and half of the Parmesan, then add vegetable mixture.
Step 6: Pour the mixture into a greased 9×13 inch baking dish, sprinkle remaining mozzarella and Parmesan on top.
Step 7: Bake for 30-35 minutes until cheese is melted and bubbly, broil for an additional 5 minutes if desired.
Step 8: Let it cool for a few minutes, then serve and enjoy.
