Ingredients

  • 1 pound of Ziti pasta
  • 2 tablespoons of Olive oil
  • 4 cloves of Garlic, minced
  • 1 medium Onion, diced
  • 1 cup of Zucchini, diced
  • 1 cup of Mushrooms, sliced
  • 1 Red bell pepper, diced
  • 2 cups of Marinara sauce
  • 15 ounces of Ricotta cheese
  • 2 cups of Shredded mozzarella cheese
  • 1 cup of Grated Parmesan cheese
  • 2 teaspoons of Italian seasoning
  • Salt and pepper to taste

  • Instructions

  • Step 1: Preheat the oven to 375°F (190°C).
  • Step 2: Cook the pasta in a large pot of salted boiling water until al dente, drain, and set aside.
  • Step 3: In a skillet, heat olive oil, sauté garlic and onion for 2-3 minutes, then add zucchini, mushrooms, and red bell pepper, cooking for additional 5-7 minutes.
  • Step 4: Stir in marinara sauce and let it simmer for 10 minutes.
  • Step 5: In a mixing bowl, combine cooked pasta, ricotta, half of the mozzarella, and half of the Parmesan, then add vegetable mixture.
  • Step 6: Pour the mixture into a greased 9×13 inch baking dish, sprinkle remaining mozzarella and Parmesan on top.
  • Step 7: Bake for 30-35 minutes until cheese is melted and bubbly, broil for an additional 5 minutes if desired.
  • Step 8: Let it cool for a few minutes, then serve and enjoy.
