4 pieces (about 1.5 lbs) of Chicken breasts
2 medium Sweet potatoes
1/4 cup of Maple syrup
2 tablespoons of Olive oil
3 cloves of Garlic, minced
2 tablespoons of Soy sauce
1 tablespoon of Dijon mustard
1 teaspoon of Salt
1/2 teaspoon of Pepper
1 tablespoon of Fresh rosemary, chopped
Instructions
Peel and cut sweet potatoes into even cubes. Toss them in a bowl with 1 tablespoon of olive oil, salt, and pepper.
Preheat oven to 400°F (200°C).
In a mixing bowl, whisk together maple syrup, the remaining olive oil, garlic, soy sauce, Dijon mustard, and chopped rosemary.
Place chicken breasts in a large resealable bag and pour the maple glaze over them. Marinate for at least 30 minutes.
Spread sweet potatoes on a baking sheet lined with parchment paper and bake for 20 minutes.
After the sweet potatoes have baked for 20 minutes, add the marinated chicken breasts to the baking sheet and brush with any leftover glaze. Bake for another 25-30 minutes.
Remove from oven, let rest for a few minutes before slicing, and serve with sweet potatoes.
