  • 4 pieces (about 1.5 lbs) of Chicken breasts
  • 2 medium Sweet potatoes
  • 1/4 cup of Maple syrup
  • 2 tablespoons of Olive oil
  • 3 cloves of Garlic, minced
  • 2 tablespoons of Soy sauce
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of Salt
  • 1/2 teaspoon of Pepper
  • 1 tablespoon of Fresh rosemary, chopped

  • Instructions

  • Peel and cut sweet potatoes into even cubes. Toss them in a bowl with 1 tablespoon of olive oil, salt, and pepper.
  • Preheat oven to 400°F (200°C).
  • In a mixing bowl, whisk together maple syrup, the remaining olive oil, garlic, soy sauce, Dijon mustard, and chopped rosemary.
  • Place chicken breasts in a large resealable bag and pour the maple glaze over them. Marinate for at least 30 minutes.
  • Spread sweet potatoes on a baking sheet lined with parchment paper and bake for 20 minutes.
  • After the sweet potatoes have baked for 20 minutes, add the marinated chicken breasts to the baking sheet and brush with any leftover glaze. Bake for another 25-30 minutes.
  • Remove from oven, let rest for a few minutes before slicing, and serve with sweet potatoes.
