  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth (low sodium recommended)
  • 1 cup heavy cream (or coconut milk for a dairy-free option)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Sauté until golden brown on both sides, about 5-7 minutes. Remove and set aside.
  • In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Pour in the chicken broth and bring to a simmer. Use this time to scrape any flavorful bits stuck to the bottom of the pot.
  • Return the sautéed chicken to the pot and add dried thyme and oregano. Cover and simmer for 20 minutes until the chicken is fully cooked.
  • Once the chicken is cooked, remove it and shred it using two forks. Return the shredded chicken to the pot, then stir in the heavy cream (or coconut milk). Allow the soup to heat through for another 5 minutes.
