1 cup shredded cheese (cheddar, mozzarella, or a blend)
1 large egg
½ cup breadcrumbs (use gluten-free if needed)
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
Oil for frying (or cooking spray for baking)
Instructions
In a large mixing bowl, combine your leftover mashed potatoes, shredded cheese, egg, garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed into a creamy consistency.
With your hands, take small portions of the mixture (about 1-2 tablespoons) and form them into balls or patties. Roll each one in the breadcrumbs to coat evenly.
For frying, heat oil in a pan over medium-high heat. Fry the cheese puffs for about 3-4 minutes on each side until golden brown. Alternatively, preheat your oven to 400°F (200°C) and bake them for 20-25 minutes, or until they are crisp and golden.
After cooking, place the puffs on paper towels to drain excess oil. Allow them to cool for a few minutes before serving.
