1 lb of ground beef (or turkey)
1 cup of breadcrumbs
2 large eggs
1/4 cup of milk
1 onion, finely chopped
2 cloves of garlic, minced
2 tbsp of Worcestershire sauce
Salt and pepper to taste
2 cups of mashed potatoes
1 cup of shredded cheddar cheese
Fresh parsley, for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine ground beef, breadcrumbs, eggs, milk, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix with your hands until fully incorporated, but do not over-mix.
Transfer the meat mixture to a lined baking sheet or a loaf pan, then shape it into a loaf form.
Bake in the preheated oven for 60 minutes or until the internal temperature reaches 160°F (70°C).
As the meatloaf cooks, bring a pot of salted water to a boil. Peel and chop your potatoes, adding them to the boiling water. Once tender, drain and mash them incorporating butter, milk, salt, and pepper, and stir in shredded cheddar cheese.
Let the meatloaf rest for 10 minutes before slicing. Serve with cheesy mashed potatoes and garnish with fresh parsley.
