  • 2 tbsp of fresh thyme, chopped
  • Juice of 2 lemons
  • 1 cup of cherry tomatoes, halved
  • 1 sliced red onion
  • 2 sliced bell peppers (any color)
  • 1/2 cup of crumbled feta cheese
  • Salt to taste
  • Pepper to taste

  • Instructions

  • In a bowl, combine chicken breasts, olive oil, minced garlic, chopped thyme, lemon juice, salt, and pepper. Ensure the chicken is well-coated in the marinade. Cover and let it marinate in the refrigerator for at least 15 minutes while you chop the vegetables.
  • Preheat your oven to 400°F (200°C). This ensures a lovely, crispy finish for your chicken while keeping it juicy inside.
  • Slice the cherry tomatoes, red onion, and bell peppers, placing them in a large baking dish. Drizzle with olive oil, season with salt and pepper, and give it a good toss.
  • Add the marinated chicken on top of the vegetable mixture. Bake in the preheated oven for 25-30 minutes until the chicken is cooked through and juices run clear.
  • During the last 5 minutes of cooking, sprinkle crumbled feta cheese over the chicken and vegetables. Return to the oven until the cheese is slightly melted and golden.
