4 pieces (about 1.5 lbs) of boneless, skinless chicken breasts
1/4 cup of olive oil
4 minced garlic cloves
2 tbsp of fresh thyme, chopped
Juice of 2 lemons
1 cup of cherry tomatoes, halved
1 sliced red onion
2 sliced bell peppers (any color)
1/2 cup of crumbled feta cheese
Salt to taste
Pepper to taste
Instructions
In a bowl, combine chicken breasts, olive oil, minced garlic, chopped thyme, lemon juice, salt, and pepper. Ensure the chicken is well-coated in the marinade. Cover and let it marinate in the refrigerator for at least 15 minutes while you chop the vegetables.
Preheat your oven to 400°F (200°C). This ensures a lovely, crispy finish for your chicken while keeping it juicy inside.
Slice the cherry tomatoes, red onion, and bell peppers, placing them in a large baking dish. Drizzle with olive oil, season with salt and pepper, and give it a good toss.
