1 cup of sweet rice flour (mochi flour)
1/4 cup of granulated sugar
1/2 cup of water
1 cup of diced strawberries
3 tablespoons of potato starch (or cornstarch)
Instructions
In a microwave-safe bowl, mix together the sweet rice flour and granulated sugar. Gradually add water, stirring until smooth.
Cover the bowl with a damp paper towel and microwave on high for 1 minute. Remove and stir vigorously. Repeat this process, microwaving in 30-second increments until the mixture becomes translucent, about 2-3 minutes total.
Let the mixture cool for a few minutes. Dust a clean surface with potato starch, then transfer the mochi onto it, dusting more starch on top.
Once cool enough to handle, knead the dough gently and roll it out to about 1/4-inch thickness. Use a cookie cutter or knife to cut out circles.
Place a diced strawberry in the center of each mochi circle and fold the mochi over to encase it, pinching to seal.
Dust the finished mochi with additional potato starch to prevent sticking. Enjoy immediately or chill before serving.
