2 ¼ teaspoons active dry yeast (or 1 packet)
1 cup warm water (about 110°F)
2 tablespoons granulated sugar
2.5 cups all-purpose flour
1 teaspoon kosher salt
4 ounces mozzarella cheese (cut into sticks)
⅓ cup baking soda (for boiling)
1 egg (for egg wash)
Coarse sea salt (for topping)
Instructions
In a mixing bowl, combine warm water and sugar. Stir in the yeast and let it stand for about 5-10 minutes until foamy.
In a large bowl, mix together the flour and salt. Gradually add the yeast mixture and combine until a dough forms. Knead on a lightly floured surface for about 5-7 minutes until smooth.
Place the dough in an oiled bowl, cover it with a damp towel, and let it rise in a warm spot until doubled in size, around 30 minutes.
While the dough is rising, cut your mozzarella cheese into sticks about 1 inch long.
After the dough has risen, punch it down, and divide it into 8 equal pieces. Roll each piece into a long rope, about 18 inches. Loop and twist it to form a pretzel shape.
Preheat your oven to 425°F (220°C). In a large pot, bring water to a boil and add baking soda. Carefully drop each pretzel into the boiling solution for about 30 seconds on each side.
Beat the egg and brush it over each pretzel. Sprinkle with coarse sea salt.
Bake in the preheated oven for 12-15 minutes until golden brown.
