1 lb of boneless, skinless chicken thighs
24 oz of fresh gnocchi
2 tablespoons of olive oil
3 cloves of garlic, minced
1/4 cup of fresh lemon juice
1 teaspoon of lemon zest
1 cup of chicken broth
4 cups of spinach
1/2 cup of grated Parmesan cheese
Salt and pepper to taste
Instructions
Step 1: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and pepper. Add the chicken and sear for about 5-6 minutes on each side until golden brown and cooked through. Remove and let rest.
