12 ounces of pasta (preferably fettuccine or spaghetti)
4 cups of vegetable or chicken broth
1 cup of freshly grated Parmesan cheese
4 tablespoons of unsalted butter
5 cloves of garlic, minced
Salt and black pepper, to taste
¼ cup of fresh parsley, chopped (for garnish)
Optional: Red pepper flakes for a spicy kick
Instructions
In a large pot or skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
Pour in the vegetable or chicken broth followed by the pasta. Make sure the pasta is submerged in the liquid. Bring this mixture to a boil, stirring occasionally.
Once boiling, reduce the heat to a simmer and cover the pot. Cook for 10-12 minutes, stirring occasionally until the pasta is al dente and most of the liquid has absorbed.
Remove the pot from heat and stir in your freshly grated Parmesan cheese. Adjust the seasoning with salt and pepper to taste.
Serve the pasta in bowls and garnish generously with chopped parsley, extra Parmesan, and red pepper flakes if desired.
