Ingredients

  • 12 ounces of pasta (preferably fettuccine or spaghetti)
  • 4 cups of vegetable or chicken broth
  • 1 cup of freshly grated Parmesan cheese
  • 4 tablespoons of unsalted butter
  • 5 cloves of garlic, minced
  • Salt and black pepper, to taste
  • ¼ cup of fresh parsley, chopped (for garnish)
  • Optional: Red pepper flakes for a spicy kick

  • Instructions

  • In a large pot or skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  • Pour in the vegetable or chicken broth followed by the pasta. Make sure the pasta is submerged in the liquid. Bring this mixture to a boil, stirring occasionally.
  • Once boiling, reduce the heat to a simmer and cover the pot. Cook for 10-12 minutes, stirring occasionally until the pasta is al dente and most of the liquid has absorbed.
  • Remove the pot from heat and stir in your freshly grated Parmesan cheese. Adjust the seasoning with salt and pepper to taste.
  • Serve the pasta in bowls and garnish generously with chopped parsley, extra Parmesan, and red pepper flakes if desired.
