1 pound of shrimp (peeled and deveined)
2 tablespoons of olive oil
4 cups of spinach (fresh)
4 cloves of garlic (minced)
1 cup of heavy cream
½ cup of Parmesan cheese (grated)
to taste of salt
to taste of pepper
from 1 lemon of lemon juice
Instructions
Gather all your ingredients to streamline the cooking process.
In a large skillet over medium heat, add the olive oil. Once heated, toss in the shrimp and cook for about 2-3 minutes on each side until they’re pink and opaque. Remove shrimp and set aside.
In the same skillet, add more olive oil if necessary, sauté minced garlic for about 1 minute until fragrant. Add fresh spinach and cook until wilted, about 2-3 minutes.
Pour in heavy cream and stir frequently, bringing the mixture to a gentle simmer while scraping the bottom of the skillet.
Add grated Parmesan cheese, salt, and pepper to the mixture. Stir until cheese is melted and combined. Squeeze in fresh lemon juice for extra flavor.
Return cooked shrimp to skillet, toss in the creamy sauce, and allow to simmer for an additional 2 minutes.
Serve hot, garnished with more Parmesan if desired.
