1 loaf stale bread (sourdough, whole-grain, or challah)
1/2 cup butter
1 cup chopped onions
1 cup chopped celery
3 cloves garlic, minced
1 tablespoon chopped rosemary
1 tablespoon chopped sage
1 tablespoon chopped thyme
1/4 cup chopped parsley
2–3 cups broth (chicken or vegetable)
Salt and pepper to taste
Sauté onions, celery, and garlic in butter until golden brown.
Combine sautéed vegetables with cubed stale bread and fresh herbs in a large bowl.
Gradually add broth until desired moisture is achieved.
Transfer mixture to a greased 9×13 inch baking dish.
Cover with foil and bake in a preheated oven at 350°F (175°C) for 30-40 minutes.
Remove foil for the last 10 minutes to crisp the top.
