Ingredients
Scale
4 large russet potatoes, peeled and diced
1/2 cup of butter
1 medium onion, chopped
1/2 cup of all-purpose flour
4 cups of chicken broth
1 cup of heavy cream
1 cup of shredded cheddar cheese
1/2 cup of cooked and crumbled bacon
Salt and pepper to taste
Fresh chives for garnish
Instructions
Step 1: Prep the Potatoes: Start by peeling and dicing the potatoes. Aim for uniform chunks for even cooking. Place them aside once done.
Step 2: Sauté the Onions: In a large pot, melt the butter over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
Step 3: Create the Roux: Stir in the flour, cooking for another 2-3 minutes until it’s golden brown.
Step 4: Add Broth and Potatoes: Slowly pour in the chicken broth while continuously stirring to avoid lumps. Add the diced potatoes and bring to a boil, then reduce heat to a simmer.
Step 5: Stir in the Cream: After the potatoes are tender (about 20 minutes), blend in the heavy cream.
Step 6: Add Seasonings and Toppings: Taste the soup, then season with salt and pepper. Stir in the shredded cheddar and crumbled bacon just before serving. Top with fresh chives.
