Ingredients

  • 12 oz of Pasta (spaghetti, fettuccine, or penne)
  • 1 cup of Sun-dried tomatoes (packed in oil, chopped)
  • 4 cloves of Garlic (minced)
  • 3 tbsp of Olive oil
  • 1/2 cup of Fresh basil (chopped)
  • 1/2 cup of Parmesan cheese (grated)
  • to taste of Salt and pepper
  • 1 tsp of Red pepper flakes (optional)

  • Step 1: Cook the Pasta – Bring a large pot of salted water to a boil. Once boiling, add your chosen pasta and cook according to the package instructions until al dente. Reserve a cup of pasta water before draining.
  • Step 2: Sauté Garlic and Tomatoes – Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped sun-dried tomatoes and cook for another 2-3 minutes.
  • Step 3: Combine Pasta and Sauce – Once the pasta is cooked and drained, add it to the skillet along with the sautéed garlic and sun-dried tomatoes. Toss gently to coat the pasta.
  • Step 4: Add the Finishing Touches – Incorporate the chopped fresh basil, parmesan cheese, and red pepper flakes (if using). Stir well and add a splash of reserved pasta water if it seems dry.
  • Step 5: Season and Serve – Season your dish with salt and pepper to taste. Plate your pasta, adding more parmesan and basil on top if desired.
