1 ½ cups of graham cracker crumbs
½ cup of unsalted butter, melted
1 cup of creamy peanut butter
16 oz of cream cheese, softened
1 cup of granulated sugar
4 large eggs
1 teaspoon of vanilla extract
1 cup of your favorite jelly (strawberry or grape work best!)
Whipped cream for topping (optional)
Instructions
Prepare the Crust: In a mixing bowl, combine graham cracker crumbs and melted butter until evenly mixed. Firmly press this mixture into the bottom of a 9-inch springform pan and bake at 350°F (175°C) for 10 minutes.
Make the Filling: In a large mixing bowl, beat together the softened cream cheese and granulated sugar until smooth and creamy. Gradually add in the peanut butter and mix well. Add the eggs, one at a time, mixing on low speed just until blended.
Bake the Cheesecake: Pour the peanut butter mixture over the pre-baked crust. Bake at 325°F (160°C) for 50 minutes, or until the edges are set, but the center still has a slight jiggle.
Add the Jelly: Once cooled, spread your favorite jelly evenly over the top of the cheesecake. Gently swirl it using a knife to create a lovely marbled effect.
Chill: Refrigerate your cheesecake for at least 2 hours, or until it’s completely firm.
