2 slices of sourdough or your choice of bread
1/2 cup fresh mozzarella cheese, sliced
1 medium tomato, sliced into rounds
1/4 cup basil pesto, homemade or store-bought
2 tablespoons unsalted butter
Salt and pepper to taste
Gather all your ingredients and slice the mozzarella and tomato.
Spread a generous layer of basil pesto on one side of one slice of bread.
Layer the mozzarella and tomato slices on top of the pesto-covered bread.
Top with the second slice of bread, also spread with pesto on one side.
In a non-stick skillet, heat the unsalted butter over medium heat until melted.
Place the sandwich in the skillet, pesto side down, and cook for about 4-5 minutes until golden brown.
Flip the sandwich over and grill for another 4-5 minutes until both sides are crispy and the cheese is melted.
Remove from the skillet and let it rest for a minute before slicing in half.
