  • 1/2 cup fresh mozzarella cheese, sliced
  • 1 medium tomato, sliced into rounds
  • 1/4 cup basil pesto, homemade or store-bought
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

  • Instructions

  • Gather all your ingredients and slice the mozzarella and tomato.
  • Spread a generous layer of basil pesto on one side of one slice of bread.
  • Layer the mozzarella and tomato slices on top of the pesto-covered bread.
  • Top with the second slice of bread, also spread with pesto on one side.
  • In a non-stick skillet, heat the unsalted butter over medium heat until melted.
  • Place the sandwich in the skillet, pesto side down, and cook for about 4-5 minutes until golden brown.
  • Flip the sandwich over and grill for another 4-5 minutes until both sides are crispy and the cheese is melted.
