1 lb of chicken breast, diced
1 cup of brown rice
1 cup of pineapple chunks
1 medium bell pepper, sliced
3 stalks of green onions, chopped
2 cloves of garlic, minced
1/4 cup of soy sauce
1 tbsp of sesame oil
1 tsp of ginger, minced
Salt and pepper to taste
Instructions
Gather all the ingredients and wash the fresh produce thoroughly.
In a medium pot, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, reduce to a simmer, cover, and cook for about 45 minutes.
In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add diced chicken breast and cook until browned on all sides, about 8-10 minutes.
