2 lbs of Beef Chuck, cut into 1-inch cubes
4 medium Carrots, peeled and chopped
4 medium Yukon Gold Potatoes, cut into chunks
1 large Onion, chopped
4 cups of Beef broth
4 cloves of Garlic, minced
2 tbsp of Worcestershire sauce
2 Bay leaves
Salt, to taste
Pepper, to taste
1 cup of Frozen peas
Instructions
Begin by gathering all your ingredients. Ensure your beef is cut into uniform cubes and chop the vegetables into similar sizes.
In a large skillet over medium-high heat, add a tablespoon of oil and sear the beef cubes until browned on all sides.
Transfer your seared beef to the crockpot. Add the carrots, potatoes, onions, garlic, and frozen peas. Pour the beef broth over the top, then add Worcestershire sauce, bay leaves, salt, and pepper. Stir gently to combine.
Cover your crockpot and set it on low heat for 8 hours or high heat for 6 hours. Optionally, you can stir in flour as a thickening agent during the last hour.
Once your beef stew is done, remove the bay leaves and taste to adjust the seasoning. If too thick, add a splash more beef broth.
Serve the stew hot, garnished with fresh herbs like parsley.
