Ingredients
Scale
2 lbs of beef chuck roast, cut into 1-inch cubes
4 carrots, sliced
4 potatoes, diced (Yukon gold or red)
1 large onion, chopped
4 cloves of garlic, minced
4 cups of beef broth
2 tbsp of tomato paste
1 tbsp of Worcestershire sauce
1 tsp of dried thyme
2 bay leaves
Salt and pepper to taste
Parsley for garnish
Instructions
Start by cutting your beef chuck roast into 1-inch cubes. This ensures even cooking and good flavor absorption.
If you want that extra depth of flavor, heat a skillet over medium-high heat and sear the beef cubes for about 3-4 minutes on each side until browned. This step is optional but highly recommended for a rich flavor.
In your crockpot, add the browned beef (if seared), chopped onion, garlic, carrots, potatoes, and all the remaining ingredients. Stir gently to combine.
Cover your crockpot and set it to cook on low for 8 hours or high for 4 hours.
Once finished, taste your stew and adjust the seasoning as necessary.
Ladle the hot stew into bowls and garnish with fresh parsley.
