  • 4 cups of chopped broccoli (fresh or frozen)
  • 2 cups of shredded sharp cheddar cheese
  • 4 cups of vegetable broth
  • 1 medium diced onion
  • 3 cloves of minced garlic
  • 1 cup of milk (or non-dairy alternative)
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and chopped broccoli to the pot. Sauté for another 5 minutes until the broccoli starts to soften.
  • Pour in the vegetable broth, scraping the bottom of the pot to release any stuck bits. Bring to a boil, then reduce heat and simmer for about 15 minutes until the broccoli is tender.
  • Using an immersion blender, blend the soup until smooth. For a chunkier texture, reserve some broccoli florets before blending and add them back after.
  • Return the blended soup to the pot and stir in the milk. Heat on low, then slowly add the shredded cheddar cheese, stirring until melted and creamy.
  • Serve your soup hot, garnished with extra cheese or herbs, alongside whole-grain bread or a salad.
