Ingredients

4 cups of chopped broccoli (fresh or frozen)
2 cups of shredded sharp cheddar cheese
4 cups of vegetable broth
1 medium diced onion
3 cloves of minced garlic
1 cup of milk (or non-dairy alternative)
2 tablespoons of olive oil
Salt and pepper to taste
Optional: pinch of red pepper flakes
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and chopped broccoli to the pot. Sauté for another 5 minutes until the broccoli starts to soften.
Pour in the vegetable broth, scraping the bottom of the pot to release any stuck bits. Bring to a boil, then reduce heat and simmer for about 15 minutes until the broccoli is tender.
Using an immersion blender, blend the soup until smooth. For a chunkier texture, reserve some broccoli florets before blending and add them back after.
Return the blended soup to the pot and stir in the milk. Heat on low, then slowly add the shredded cheddar cheese, stirring until melted and creamy.
Serve your soup hot, garnished with extra cheese or herbs, alongside whole-grain bread or a salad.
