  • 4 cloves of garlic, minced
  • 1 tbsp of minced ginger
  • 1 cup of tomato puree
  • 1 can (13.5 oz) of coconut milk
  • 2 tbsp of Butter Chicken spice mix
  • Salt to taste
  • Fresh coriander for garnish

  • Instructions

  • Step 1: Marinate the Chicken – Cut the chicken thighs into bite-sized pieces. In a bowl, combine the chicken with 1 tablespoon of the Butter Chicken spice mix, a pinch of salt, and a splash of lime juice if desired. Let it marinate for at least 10 minutes.
  • Step 2: Sauté Aromatics – In a large skillet, melt 2 tablespoons of butter over medium heat. Add the finely chopped onion and sauté until it becomes translucent and aromatic, about 5 minutes.
  • Step 3: Add Ginger and Garlic – Once the onions are ready, add the minced ginger and garlic. Stir for about 1 minute until their fragrance fills the kitchen.
  • Step 4: Cook the Chicken – Increase the heat to medium-high and add the marinated chicken to the skillet. Brown the chicken pieces for about 5 minutes.
  • Creating the Sauce – Add the tomato puree and the remaining Butter Chicken spice mix. Stir to combine and allow to simmer for 3-5 minutes until the sauce thickens slightly.
  • Step 5: Add Coconut Milk – Pour in the coconut milk, stirring gently to combine. Lower the heat and cover, cooking for an additional 10 minutes.
