1 lb (450 g) of boneless chicken thighs
4 tbsp of butter
1 medium onion, finely chopped
4 cloves of garlic, minced
1 tbsp of minced ginger
1 cup of tomato puree
1 can (13.5 oz) of coconut milk
2 tbsp of Butter Chicken spice mix
Salt to taste
Fresh coriander for garnish
Instructions
Step 1: Marinate the Chicken – Cut the chicken thighs into bite-sized pieces. In a bowl, combine the chicken with 1 tablespoon of the Butter Chicken spice mix, a pinch of salt, and a splash of lime juice if desired. Let it marinate for at least 10 minutes.
Step 2: Sauté Aromatics – In a large skillet, melt 2 tablespoons of butter over medium heat. Add the finely chopped onion and sauté until it becomes translucent and aromatic, about 5 minutes.
