1 lb of shrimp, peeled and deveined
1 cup of fresh parsley, finely chopped
3 cloves of garlic, minced
1/2 cup of red wine vinegar
1/2 cup of olive oil
1/2 teaspoon of red pepper flakes
Salt to taste
Lemon wedges for garnish
Instructions
In a medium bowl, combine the finely chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well until all ingredients are fully incorporated. Let it sit to enhance the flavors.
Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Once hot, add the shrimp in a single layer. Cook for about 2-3 minutes on one side until slightly pink, then flip and cook for another 2-3 minutes. Remove from heat.
Once the shrimp are cooked through, pour the chimichurri sauce over them, tossing gently to coat each shrimp.
