  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Toothpicks or kitchen twine for securing chicken (optional)

  • Preheat your oven to 375°F (190°C). Prepare your baking dish by greasing it lightly with olive oil or cooking spray.
  • In a medium bowl, combine the chopped roasted red peppers, fresh mozzarella, basil, minced garlic, Italian seasoning, and a pinch of salt and pepper. Mix thoroughly until well incorporated.
  • Carefully slice a pocket into each chicken breast, making sure not to cut all the way through. Stuff each pocket generously with the filling and secure the openings if necessary.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for about 4-5 minutes per side until golden brown. Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  • Once cooked, remove the chicken from the oven and let it rest for 5 minutes before slicing.
