4 boneless, skinless chicken breasts
1 cup roasted red peppers, chopped (jarred or homemade)
1 cup fresh mozzarella cheese, shredded or sliced
1/2 cup fresh basil leaves, roughly chopped
3 cloves garlic, minced
1 teaspoon Italian seasoning
1 tablespoon olive oil
Salt and pepper to taste
Toothpicks or kitchen twine for securing chicken (optional)
Instructions
Preheat your oven to 375°F (190°C). Prepare your baking dish by greasing it lightly with olive oil or cooking spray.
In a medium bowl, combine the chopped roasted red peppers, fresh mozzarella, basil, minced garlic, Italian seasoning, and a pinch of salt and pepper. Mix thoroughly until well incorporated.
Carefully slice a pocket into each chicken breast, making sure not to cut all the way through. Stuff each pocket generously with the filling and secure the openings if necessary.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for about 4-5 minutes per side until golden brown. Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
Once cooked, remove the chicken from the oven and let it rest for 5 minutes before slicing.
