  • 2 cups of ripe strawberries, hulled and halved
  • 1 cup of ricotta cheese
  • 2 tablespoons of honey
  • 1 tablespoon of balsamic vinegar
  • 4 slices of sourdough bread
  • 6 leaves of fresh basil, torn
  • 2 tablespoons of olive oil

  • Instructions

  • Preheat your oven to 375°F (190°C). In a mixing bowl, combine the halved strawberries with honey and balsamic vinegar. Gently toss until they are evenly coated. Spread them out on a baking sheet lined with parchment paper and roast for 15 minutes until soft and caramelized.
  • While the strawberries are roasting, drizzle olive oil on both sides of the sourdough bread. Heat a skillet over medium heat and toast each slice until golden brown and crispy, about 3-4 minutes per side.
  • In a bowl, add the ricotta cheese and whip it until creamy and fluffy. Optionally, fold in a teaspoon of honey for extra sweetness.
  • Once the strawberries are done roasting and the bread is toasted, spread a generous layer of whipped ricotta on each slice of bread. Top with warm roasted strawberries.
  • Finish with a sprinkle of torn basil leaves and a light drizzle of balsamic for acidity. Serve immediately.
