  • 1 pound of cherry tomatoes, halved
  • 4 cloves of garlic, peeled and crushed
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 12 ounces of pasta (spaghetti, penne, or your favorite type)
  • 1 cup of ricotta cheese
  • Fresh basil leaves, for garnish
  • Parmesan cheese, grated (optional)

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the halved cherry tomatoes and crushed garlic cloves. Drizzle with olive oil, and add salt and pepper. Toss well.
  • Spread the mixture evenly on a baking sheet and roast for 15-20 minutes until tomatoes are tender.
  • While tomatoes are roasting, cook the pasta in salted boiling water according to package instructions.
  • Once the pasta is al dente, drain it and return it to the pot. Add the roasted tomato and garlic mixture along with ricotta cheese, mixing gently and adding reserved pasta water as needed.
  • Plate the pasta and garnish with fresh basil leaves and grated Parmesan cheese. Serve immediately.
