4 pieces of boneless, skinless chicken breasts
2 cups of fresh spinach
1 cup of crumbled feta cheese
1/2 cup of chopped sun-dried tomatoes
3 cloves of minced garlic
2 tablespoons of olive oil
1 teaspoon of dried oregano
Salt and pepper to taste
Toothpicks or kitchen twine as needed
Instructions
Preheat your oven to 375°F (190°C) and prepare a baking pan by lining it with parchment paper.
In a skillet, add 1 tablespoon of olive oil, sauté the minced garlic for 1 minute, then add the fresh spinach and stir until wilted, about 3-4 minutes. Let cool.
Combine the sautéed spinach, crumbled feta, chopped sun-dried tomatoes, oregano, salt, and pepper in a mixing bowl and mix thoroughly.
Place each chicken breast between two sheets of plastic wrap and pound to about 1/2-inch thickness.
Spread the filling over each chicken breast, roll tightly, and secure with toothpicks or twine.
Drizzle remaining olive oil over the rolled chicken and bake for 30-35 minutes until cooked through.
