4 boneless, skinless chicken breasts
1 cup apple cider (freshly pressed is best for rich flavor)
2 tablespoons olive oil
3 sprigs of fresh rosemary (or 1 tablespoon dried rosemary)
2 cloves of garlic, minced
1 teaspoon salt
½ teaspoon black pepper
1 cup chicken broth
Optional: 1 apple (sliced), for garnish
Instructions
In a medium bowl, whisk together the apple cider, olive oil, minced garlic, salt, pepper, and rosemary to create a marinade.
Place the chicken breasts in a large resealable bag or shallow dish and pour the marinade over them. Seal or cover, and marinate in the fridge for at least 30 minutes, preferably overnight.
Heat a large skillet over medium-high heat and add a splash of olive oil. Remove chicken from the marinade and sear each side for about 5 minutes until golden brown.
Pour the chicken broth into the pan, scraping any remnants from the bottom. Cover and reduce heat to low, simmer for 15-20 minutes until the chicken is cooked through (internal temperature should reach 165°F).
Remove chicken from the pan, let it rest, then serve with pan sauce drizzled on top and garnish with apple slices if desired.
